將帶魚放入80℃左右的水中,燙大約10秒鍾,然後再放入冷水中,用塑料刷子刷或者用鋼絲毬刮一下帶魚表面,這樣就可以很輕松地去掉帶魚的鱗。
如果刮後的帶魚比較髒,可用淘米水擦洗一遍,這樣不但能把魚洗淨,而且還可去除手上的魚腥味。
帶魚的魚鱗一般含較多的雜質,且營養含量不多、味道發腥,不容易被人體消化。所以做帶魚時都儘量把魚鱗刮乾淨再烹飪。但是,帶魚鱗緊貼在帶魚表面,特別不好刮淨。大傢可以試試下列方法。
